Ingredients
  

For the Birria Sauce

  • 2 pounds beef chuck roast
  • 1 onion, quartered
  • 4 cloves garlic
  • 2 cups beef broth
  • 1 can (12 oz) diced tomatoes
  • 2 dried guajillo peppers Can substitute with ancho peppers or chili powder
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 2 bay leaves
  • Salt and pepper to taste

For Serving

  • Corn tortillas
  • Chopped cilantro and onion For topping
  • Lime wedges For serving

Instructions
 

Preparation

  • In a skillet, toast the dried guajillo peppers until fragrant.
  • Blend the toasted peppers with the beef broth, diced tomatoes, garlic, onion, chili powder, cumin, oregano, and bay leaves until smooth.

Cooking

  • Place the chuck roast in the Crock Pot and season it with salt and pepper.
  • Pour the blended sauce over the meat.
  • Cook on low for 8 hours or until the meat is tender.
  • Once cooked, shred the meat and serve it in warm corn tortillas.

Notes

For extra flavor, marinate the chuck roast in the blended sauce for a few hours before cooking. If you like it spicy, add more dried guajillo peppers or include other types of chili peppers. Serve with beans or Mexican rice for a complete meal.
