Ingredients
  

Dry Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup sugar Optional, can be reduced or omitted for less sweetness.
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt

Wet Ingredients

  • 1 cup milk
  • 1/4 cup vegetable oil
  • 2 large eggs Can use egg substitute if desired.

Preparation

  • Preheat your oven to 400°F (200°C). Grease a baking pan.
  • In a large bowl, mix together cornmeal, flour, sugar, baking powder, and salt.
  • In another bowl, whisk together milk, oil, and eggs.
  • Pour the wet ingredients into the dry ingredients and stir until just combined.
  • Spread the batter into the prepared pan.

Baking

  • Bake for 20-25 minutes, or until golden and a toothpick inserted in the center comes out clean.
  • Allow to cool slightly before serving.

Notes

Serve warm or at room temperature. Slice into squares and enjoy with butter or alongside chili and soups. For a crispy crust, use a cast-iron skillet instead of a baking pan. Store leftovers in an airtight container for a couple of days, or freeze wrapped tightly for up to 3 months.
