  • 2 cups cooked chicken, shredded Use rotisserie chicken for convenience.
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 2 cups cooked rice Brown rice can be used for added fiber.
  • 1 cup salsa
  • 1 teaspoon chili powder Adjust for heat preference.
  • 1 teaspoon cumin
  • 2 cups shredded cheese Consider using pepper jack for spiciness.

Layering items

  • Tortilla chips or tortillas for layering
  • Salt and pepper to taste

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, mix together the cooked chicken, black beans, corn, rice, salsa, chili powder, cumin, and season with salt and pepper.

Assembly

  • In a casserole dish, layer tortilla chips or tortillas on the bottom.
  • Pour half of the chicken mixture over the chips.
  • Sprinkle with a layer of cheese.
  • Repeat the layers with the remaining mixture and top with the rest of the cheese.

Baking

  • Bake for 25-30 minutes or until the cheese is melted and bubbly.
  • Let it cool for a few minutes before serving.

Notes

Serve warm, with optional toppings like sour cream, guacamole, or fresh cilantro. Store leftovers in an airtight container for up to 3 days in the fridge, or freeze for up to 2 months.
