  • 4 medium potatoes, sliced
  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cups shredded cheddar cheese
  • 1 can cream of mushroom soup
  • 1 cup milk
  • Salt and pepper to taste
  • Olive oil for cooking

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent.
  • Add ground beef, season with salt and pepper, and cook until browned.
  • In a large baking dish, layer half of the sliced potatoes.
  • Spread the ground beef mixture over the potatoes, then sprinkle with half of the cheddar cheese.
  • Add the remaining potatoes on top.
  • In a bowl, mix the cream of mushroom soup and milk until smooth. Pour over the casserole.
  • Cover with foil and bake for 45 minutes.
  • Remove the foil, add the remaining cheese on top, and bake uncovered for an additional 15-20 minutes or until golden and bubbly.
  • Let it cool for a few minutes before serving.

Notes

Serve this casserole hot with a fresh side salad or steamed vegetables. For storage, let it cool completely before transferring to an airtight container. Refrigerate for up to 3 days or freeze for up to 2 months. Reheat in the oven until heated through.
