Ingredients
  

Main Ingredients

  • 8 large large tortillas
  • 8 pieces eggs cracked and beaten
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • 1 cup shredded cheese cheddar or your choice
  • 1 cup cooked sausage or bacon optional
  • Salt and pepper to taste
  • Salsa or hot sauce for serving
  • Fresh cilantro for garnish, optional

Preparation

  • Preheat your BBQ grill to medium heat.
  • In a large bowl, crack the eggs and whisk them until they are fully beaten. Add salt and pepper.
  • In a skillet, over medium heat on the BBQ, sauté the bell peppers and onions until they are soft.
  • Add the beaten eggs to the skillet and scramble with the vegetables. Cook until the eggs are set.
  • If using sausage or bacon, add it to the skillet and mix well.
  • Remove the skillet from the heat and stir in the shredded cheese until melted.

Assembly and Cooking

  • Take a tortilla and spoon some of the egg mixture into the center.
  • Fold the sides of the tortilla over the filling and then roll it up from the bottom. Make sure it’s tight.
  • Place the burrito seam-side down on the grill for about 2 minutes, or until it is golden brown.
  • Flip the burrito and grill the other side for another 2 minutes.
  • Remove the burritos from the grill and let them cool slightly before serving.

Notes

Serve the burritos warm, topped with salsa or hot sauce and optionally sprinkled with fresh cilantro. Pair with fresh fruit or hash browns for a complete breakfast.
