  • 1 lb ground beef
  • 1 can (10 oz) red enchilada sauce
  • 8 pieces corn tortillas
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  • Add the onion and garlic, then sauté until softened.
  • Stir in the black beans, corn, enchilada sauce, cumin, chili powder, salt, and pepper.

Layering and Baking

  • In a baking dish, layer 4 corn tortillas, half of the beef mixture, and half of the cheese.
  • Repeat the layers, finishing with tortillas and cheese on top.
  • Bake for 20-25 minutes until the cheese is melted and bubbly.
  • Let cool for a few minutes before serving.

Notes

Serve hot with toppings like sour cream, fresh cilantro, jalapeños, or avocado. It pairs nicely with a side salad or Mexican rice.
