  • 1 pound ground beef Use lean ground beef for a healthier option
  • 1 cup elbow macaroni You can switch up the pasta type if desired
  • 1 can (14.5 oz) diced tomatoes Can substitute fresh tomatoes if preferred
  • 4 cups beef broth Reduce the amount for a thicker soup
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt Adjust to taste
  • 1/2 teaspoon pepper Adjust to taste
  • 1 tablespoon olive oil For sautéing
  • to taste Fresh parsley for garnish Optional

Preparation

  • In a large pot, heat olive oil over medium heat.
  • Add chopped onion and minced garlic, cooking until the onion is translucent.
  • Add ground beef and cook until browned. Drain excess fat.
  • Stir in diced tomatoes, beef broth, oregano, salt, and pepper.
  • Bring to a boil, then reduce heat to a simmer.
  • Add elbow macaroni and cook until tender, about 8-10 minutes.
  • Adjust seasoning if necessary and serve warm, garnished with fresh parsley if desired.

Notes

This soup is great for lunch or dinner and can be enjoyed with crusty bread or a salad. Leftovers can be stored in an airtight container for up to 3 days, or frozen for up to 3 months.
