  • 1 teaspoon sugar Adjust according to taste.
  • 1 clove garlic, minced
  • 1 teaspoon sesame seeds Sprinkle before serving.
  • 1 stalk green onion, finely chopped Add just before serving for freshness.

Preparation

  • In a bowl, mix the sesame oil, rice vinegar, soy sauce, sugar, and minced garlic to create the dressing.
  • Add the cucumber slices to the bowl and toss well to coat.
  • Let the salad marinate for at least 15 minutes.
  • Before serving, sprinkle with sesame seeds and chopped green onion.

Notes

For extra crunch, use a mix of cucumber varieties. Letting the salad marinate longer can enhance flavors. Store leftovers in an airtight container for up to 2 days, but the cucumbers may become softer.
