Ingredients

For the crust

  • 1 batch Pie crust dough, enough for the base and top of a rectangular baking pan Homemade or store-bought
  • 1 large Egg, beaten with a splash of water or milk, for brushing the crust

For the filling

  • 6 cups Fresh apples, peeled, cored, and thinly sliced Choose firm baking apples
  • 1 cup Granulated sugar
  • 1/2 cup Brown sugar
  • 1/4 cup All-purpose flour or cornstarch Used to thicken the filling
  • 1 teaspoon Ground cinnamon
  • 1/4 teaspoon Ground nutmeg Optional
  • 1 pinch Salt
  • 2 tablespoons Fresh lemon juice To prevent browning of apples
  • 1 teaspoon Vanilla extract Optional
  • 1/4 cup Unsalted butter, cut into small pieces To be distributed over the apples

Instructions

Preparation

  • If using homemade dough, prepare it according to your recipe and chill until firm but workable. Divide the dough into two portions, with one slightly larger for the bottom crust.
  • Peel, core, and thinly slice the apples. Toss with lemon juice.

Filling Preparation

  • Combine the apples with granulated sugar, brown sugar, flour or cornstarch, cinnamon, nutmeg if using, salt, and vanilla. Mix gently.

Crust Assembly

  • Roll the larger portion of dough into a rectangle slightly larger than your baking pan. Transfer it to the pan, pressing gently into corners.
  • Spread seasoned apples evenly over the crust. Distribute pieces of butter over the top of the filling.
  • Roll out the remaining dough and place it over the apples. Trim excess pastry, pinch edges to seal, and cut vents in the top crust.

Baking

  • Brush the crust with the beaten egg mixture. Sprinkle with coarse sugar if desired. Bake in a preheated oven until crust is golden and filling is bubbling.

Cooling and Serving

  • Let the pie cool until filling sets. Slice into squares and serve warm or at room temperature.

Notes

Serve warm with vanilla ice cream, whipped cream, or a drizzle of salted caramel. Cool the pie before cutting for cleaner slices.
