  • 8 pieces corn tortillas Flour tortillas can be used if preferred.

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  • Add enchilada sauce and black beans to the beef. Stir and heat through.
  • Spoon the beef mixture into each tortilla, roll up, and place seam-side down in a baking dish.
  • Top with shredded cheese.

Cooking

  • Bake for 20 minutes or until cheese is melted and bubbly.
